Grilled dish: Salt-grilled cherry trout, cod sprouts with egg yolk vinegar, dyed grated radish
Palate cleanser: Charcoal-grilled Rusutsu Yotei pork, overwintered sweet potato, golden carrot, butterbur miso, cherry blossom salt
Steamed dish: Steamed egg custard with new onions
Main course: Clay pot rice cooked with firefly squid and green beans, pickles, red miso soup
Dessert: Cherry blossom ice cream monaka, red bean paste, dried strawberries, whipped cream
