Noguchi's soy sauce pork cutlet bowl arranged in Nakamura style. This whitebait bowl is topped with a generous amount of whitebait from Masutomi Shoten in Wakayama Prefecture, of which the owner Nakamura is a huge fan, and is topped with mitsuba, shiso leaves, and a secret ingredient of ume kombu (plum kelp), creating a light, delicious soy sauce dish.
