Our indulgent Bûche de Noël is made for chocolate lovers. The chocolate sponge is rolled with care around a smooth milk chocolate cream—created by making a fresh ganache and then whipping it into a silken filling. Hidden in the center of the log is an extra-rich dark chocolate ganache. The decoration is finished with a lightly sweet, bitter dark chocolate cream. This Christmas mousse cake tells the playful story of Santa carrying presents who bumps into the tree and knocks off the ornaments. The base is a rich, moist gâteau au chocolat made with rice flour.
