ビステッカとはイタリア発祥のビーフステーキのことです。
「ビステッカ」という名の由来は、15世紀ごろ、フィレンツェの聖ロレンツォ教会前で行われていた祭りが発祥と言われています。この祭りではビステッカの元祖となる大きな牛肉の塊が振舞われていました。
背中側の、肩から腰にかけての広い部位をロースといい、そのロースのうちの一部を「サーロイン」と呼びます。牛の背中の腰近くのため、ほとんど動かない場所であることから、お肉のやわらかくとろける美味しさです。
赤身の間に、レース編みのような芸術的なきめ細かなサシが入った美しい霜降り肉です。
背骨まわり独特のうま味と凝縮されたおいしさ、霜降り肉の脂がほどよく甘く、肉汁がジューシーです。

Bistecca is a beef steak that originated in Italy.
