A luxurious strawberry parfait, limited to just 20 servings per day, made with seasonal strawberries. Sweet and tangy strawberries are layered with slowly simmered berry compote, tonka bean cream with its fragrant sweetness, and lychee jelly, creating a winter-only harmony. Lightly bitter oolong tea espuma adds a refined touch, while almond crumble provides a textural accent, making this parfait perfect for an elegant teatime.
