Made not with a beef-and-pork blend, but with 100% Kuroge Wagyu.
Rather than relying on fat for lightness, we have designed it to maximize the natural umami of lean meat. Through a double-grinding technique and precise temperature control, we achieve both tenderness and depth of flavor.

In addition to two seasonal appetizers,
the course features a rich sea urchin cream croquette,
and our signature Kuroge Wagyu hamburger steak topped with foie gras.

Each dish, including the final course, is carefully composed to create balance and to express the depth of Japanese-style Western cuisine.
