The freshly cut tuna is served as nigiri, seared nigiri, sukiyaki and a thick roll, each bringing out the character of the cut. From the crown of the head and cheek to the collar (kama-toro), you will taste rare cuts you seldom come across - the whole fish, with nothing wasted.
