【Premium Christmas Live Dinner】
Created by Maniya Nakaune, the hotel’s Executive Chef with a proven track record of winning awards at international French cooking competitions, this exclusive Christmas course features a variety of luxurious winter delicacies. It begins with an elegant cold appetizer where seafood and white asparagus mousse are arranged to resemble a Christmas wreath. Subsequent dishes include pheasant from Yusuhara, Kōchi Prefecture, paired with chanterelle mushrooms; sole cooked en papillote; and domestic beef fillet topped with a mushroom gratin. The meal concludes with a rich chocolate mousse infused with coffee, served alongside salted milk ice cream for a delightful aftertaste. This special Christmas menu artfully combines traditional French culinary techniques—which emphasize enhancing the natural flavors of ingredients—with premium local produce from Kōchi Prefecture, the chef’s hometown.
