Seasonal Kaiseki Course
There are no pre-written menus for dinner at our inn.

Our chefs carefully select the seasonal ingredients of Kanazawa and Noto and prepare a "once-in-a-lifetime menu" right before your eyes.

Our artisanal skills are applied to every detail, from cooking the food to using the knife, to bring out the full flavor of the ingredients.

The rising aroma, the sound of the charcoal fire, and even the seasonal colors reflected on the dishes all add to the enjoyment of the meal.

Please enjoy to your heart's content this encounter with a dish that can only be enjoyed in that moment and on that spot.

The vertical thread of the "food culture that has continued since the Kaga Hyakumangoku" (one million koku of rice) is layered with the horizontal thread of "seasonal delicacies from Kanazawa and Noto,"
and carefully woven into a single dish. That is the cuisine at our restaurant.

We combine traditional principles with modern sensibilities to capture the best moments of the ingredients and prepare them to the brim.

The water we use is deep-sea water sourced from Noto. The rich flavors of the land truly blossom in the waters of that land.
