The vertical thread of the "food culture that has continued since the Kaga Hyakumangoku" (one million koku of rice) is layered with the horizontal thread of "seasonal delicacies from Kanazawa and Noto,"
and carefully woven into a single dish. That is the cuisine at our restaurant.
We combine traditional principles with modern sensibilities to capture the best moments of the ingredients and prepare them to the brim.
The water we use is deep-sea water sourced from Noto. The rich flavors of the land truly blossom in the waters of that land.

温暖化の影響でズワイ蟹の好漁場は北上し、近年では能登沖が最良の漁場とされています。
とりわけ、立山連峰のミネラルが富山湾へと流れ込み、豊富なプランクトンが育つ海域に隣接する能登沖の蟹は、
餌環境に恵まれ、身の締まりと旨みの濃さにおいて格別です。
当庵では、その能登沖で水揚げされた1.2kg以上の加能蟹の中から、漁師に協力を仰ぎながら厳選した最高の蟹を仕入れ、
できる限り新鮮な状態でお客様にお届けしております。
