Déjeuner <Lunch Course>
The amuse-bouche begins with a smooth flan, followed by the deep flavor of sea bream, the gentle sweetness of cauliflower puree, and the pleasant bitterness of rape blossoms, gently spreading throughout the dish, allowing you to feel the breath of spring.
The following hors d'oeuvres feature the minerality and sweetness of fresh shellfish, perfectly complemented by the fresh acidity of strawberries.
The fish dish is a classic pan-fried fish.
The skin is so crisp and fragrant that it makes a pleasant sound when you cut into it with a knife, while the meat is moist and plump.
The distinctive, vivid aroma and mature bitterness of butterbur perfectly complement the sweetness of the white fish fat.
The beef neck, slowly cooked over time, is so tender that it doesn't even need a knife.
To finish off the meal, enjoy Madame's seasonal dessert.
