Chef Minami's signature dish, "Cantonese Pho with Seafood and Yatsugatake Malt Red Chicken Rich Broth," is a Cantonese-style noodle dish with rice flour and a rich broth. The chicken broth, sourced from Nakamura Farm in the Yatsugatake region of Yamanashi Prefecture, is rich yet light in flavor. The chewy flat noodles, made with domestically grown rice flour, are perfectly intertwined with the soup. The dish is lavishly presented with seasonal fish and seafood from Misaki Fishing Port in Kanagawa Prefecture, and colorful Chinese vegetables. Enjoy the savory and spicy flavor of our homemade chili sauce.
