【シャンパーニュ】　NV Louis Roederer Collection 242
「ルイ・ロデレール」は1776年の設立以来、家族経営を貫いています。コレクションナンバーは1776年メゾン設立以降何度目に収穫した葡萄をベースワインとして用いブレンドしたのかを表しており、その年のベースワインとリザーブワインを最良のバランスでブレンドしています。
【日本酒】　山形政宗 純米吟醸 雄町 / 山形県 水戸部酒造
仕込水は蔵元の上流奥羽山系のミネラル豊富な伏流水、日本の天然水の平均高度は「50」対し使用水の硬度は「120」。使用する酒米は現存するほとんどの酒米のルーツである「雄町」、大粒で心白が大きく柔らかいので醪に溶けやすく濃醇な味わい。杜氏の手技、仕込水、雄町米の結晶です。
【白ワイン】　2018年 Rully Blanc Les Maizières / Vincent Dureuil-Janthial
　「ベビーモンラッシェ」と讃えられる高品質の仏コート・ド・シャロネーズ地区の村名AC。リュリー村では13世紀から続く最も古い家族経営のドメーヌの一つです。

【赤ワイン】　1984年 Château Pichon Longueville Comtesse de Lalande
ポイヤック村ボルドー格付け2級。エレガントと力強さを秘めたワインは「ポイヤックの貴婦人」と称される。1984年は哥利歐の創業年でもあります、37年間の歴史も一緒にお愉しみ下さい。

【デザートワイン】　2017年 Château Doisy Daene
ソーテルヌ地区格付け2級、凝縮感があり、フルボディ。蜜やトロピカルフルーツの味わい。

■■哥利歐のこだわり■■
哥利歐で使用する特選但馬牛は、徹底した管理のもと育てられる純血品種。その中でも折り紙つきの処女牛を選び、特製の炉窯で紀州備長炭を使った直火焼で仕上げるステーキは、きめ細やかな肉質で、口の中に広がる旨みと甘みのある肉汁を存分に味わえる逸品。
