At COKUUN, we approach coffee as an ingredient, composing flavors as one would in cuisine and presenting them through an approximately 90-minute Coffee Omakase.

The course consists of approximately six beverages, ranging from coffee served in its purest expression to creations that reveal new dimensions through seasonal fruits, herbs, and vegetables.

Each is served in a small portion, with the total caffeine intake across the entire course equivalent to approximately two regular cups of coffee.


◆ CURRENT CHAPTER
AUGUST – SEPTEMBER 2026

For this chapter, 2014 World Barista Champion HIDE IZAKI selected a Gesha coffee from Alasitas Estate in Bolivia.

Beginning with this single coffee, the course brings together rare flat peaches, white peaches, Japanese mangoes, and seasonal herbs and vegetables that reflect the transition from summer into early autumn.

The experience begins with the character of the coffee itself. Through extraction, temperature, texture and its relationship with different ingredients, that character is revealed from a series of distinct perspectives.

◆ NEXT CHAPTER
OCTOBER – NOVEMBER 2026

The theme of the next chapter is “Harvest.”

At the heart of the course is:
Iris Estate Geisha Blush, processed using the Nitrogen Flush Natural method.

Beginning with this single coffee, the course brings together the harvest of the Japanese autumn: distinctive apples from Nagano, sweet potatoes from Kuroki Honten in Miyazaki, chestnuts from Kasama in Ibaraki, Japanese pears and figs.

The coffee’s vivid fruit character and fermentation-derived aromas are layered with the ripeness of autumn fruit, the texture of chestnuts and sweet potatoes, and their lingering depth. As the course unfolds, the experience moves from “fruit” toward a deeper expression of “harvest.”

COKUUN is located in Minato-ku, Tokyo, within a 10-minute walk of Omotesando Station.

COKUUN cannot be found on Google Maps.
The exact address will be shared once your reservation is confirmed.

Breakfast Coffee Omakase brings together COKUUN’s Coffee Omakase and breakfast as one continuous experience.

From coffee enjoyed in its purest expression to beverages that reveal new dimensions through herbs, tea, and seasonal ingredients, breakfast dishes and drinks unfold together as a single course.

For this chapter, we feature a Geisha coffee from Alasitas Farm in Bolivia, selected by HIDE IZAKI, 2014 World Barista Champion.


◆ BREAKFAST EXPERIENCE

In addition to the Coffee Omakase experience, the course includes three seasonal side dishes, three sandwiches — Marmalade, Cheese & Cucumber, and Ham & Spinach — and yogurt.

Coffee, mocktails, and other beverages are paired with the breakfast dishes throughout the experience, reimagining the concept of Coffee Omakase for the beginning of the day.

Coffee Omakase is an approximately 90-minute tasting course that approaches coffee as an ingredient and composes its flavours with the structure and intention of cuisine.

Across approximately six drinks, the course begins with an expression of the coffee itself before unfolding through seasonal fruits and crops. Its aroma, acidity, sweetness, texture and finish are transformed into a series of new experiences.

At the heart of this chapter is Iris Estate Gesha Blush, processed using the Nitrogen Flush Natural method.

The richness of the autumn harvest is expressed through more than sweetness. It can be found in the aromatic depth of ripe fruit, the texture of chestnuts and sweet potatoes, the concentration of flavour and the lingering finish. These qualities are layered with the coffee’s vivid fruit character and fermentation-derived aromas, allowing the experience to deepen from “fruit” toward a broader expression of “harvest” as the course unfolds.

Alongside the drinks, pairings are presented as composed plates and confections. Together, they reveal how a single coffee evolves through extraction, temperature, texture and its relationship with different ingredients.

Each drink is served in a small portion. The total caffeine content of the course is approximately equivalent to two standard cups of coffee.
