At COKUUN, we approach coffee as an ingredient, composing flavors as a chef would to create a 90-minute Coffee Omakase experience.

The course features approximately six drinks, beginning with coffee in its purest form and progressing through compositions that combine coffee with seasonal fruits, herbs, vegetables, and other ingredients.

Each drink is served in a small portion. The total caffeine content of the entire course is approximately equivalent to two regular cups of coffee.


◆ CURRENT CHAPTER
OCTOBER – NOVEMBER 2026

The theme of this Chapter is "Harvest."

For this Chapter, Hide Izaki, the 2014 World Barista Champion, has selected Iris Estate Geisha Blush (Nitrogen Flush Natural).

Starting with this single coffee, the course explores Japan's autumn harvest through distinctive apples from Nagano, sweet potatoes from Kuroki Honten in Miyazaki, chestnuts from Kasama in Ibaraki, Japanese pears, and figs.

The coffee's vibrant fruit character and fermentation-derived aromas are combined with the richness of ripe fruits and the textures and lingering flavors of chestnuts and sweet potatoes.

As the course unfolds, the tasting experience gradually moves from fresh fruit to the deeper flavors of the autumn harvest.

The full course remains a surprise until the day of your visit.

COKUUN is located in Minato-ku, Tokyo, within a 10-minute walk of Omotesando Station.

We are delighted to present a one-of-a-kind collaboration featuring Georgius Audrey, 2025 World Coffee in Good Spirits Champion, and Mikael Jasin, 2024 World Barista Champion.

Based at OMAKAFE in Jakarta, Indonesia, both champions have made their mark on the global coffee stage. For this special one-day event, they will present four original drinks centered around coffee mocktails, exploring new possibilities and expressions of coffee.

Against the backdrop of Indonesia, one of the world’s great coffee-producing countries, experience the creativity of two world champions—each with remarkable achievements and a distinctive perspective—as they share their vision of coffee today.

Coffee Omakase | October/ November
Coffee Omakase is an approximately 90-minute tasting course that approaches coffee as an ingredient and composes its flavours with the structure and intention of cuisine.

Across approximately six drinks, the course begins with an expression of the coffee itself before unfolding through seasonal fruits and crops. Its aroma, acidity, sweetness, texture and finish are transformed into a series of new experiences.

At the heart of this chapter is Iris Estate Gesha Blush, processed using the Nitrogen Flush Natural method.

Beginning with this single coffee, the course brings together the harvest of the Japanese autumn: distinctive apples from Nagano, sweet potatoes from Kuroki Honten in Miyazaki, chestnuts from Kasama in Ibaraki, Japanese pears and figs.

The richness of the autumn harvest is expressed through more than sweetness. It can be found in the aromatic depth of ripe fruit, the texture of chestnuts and sweet potatoes, the concentration of flavour and the lingering finish. These qualities are layered with the coffee’s vivid fruit character and fermentation-derived aromas, allowing the experience to deepen from “fruit” toward a broader expression of “harvest” as the course unfolds.

Alongside the drinks, pairings are presented as composed plates and confections. Together, they reveal how a single coffee evolves through extraction, temperature, texture and its relationship with different ingredients.
