This is a course featuring exquisite omakase prepared using only the finest ingredients carefully selected by our restaurant.
It includes an appetizer, a side dish, 14 pieces of sushi (including our signature “toro grilled over charcoal”), a small bowl of uni and salmon roe, maki rolls, tamago, and a soup – a total of 20 courses.

We use two types of vinegar for our rice: red vinegar and rice vinegar, as well as two kinds of seasoned soy sauce, which we select according to the type of fish or seafood used.

For the rice, we use our own original blend called “Nagai Sushi Jumai,” cultivated and milled in collaboration between our sushi chefs and rice producers from Kumamoto.

A total of 23 dishes: 8 items including appetizers, sashimi (including toro), and cooked dishes (including steamed abalone with liver sauce); hairy crab rice topped with uni and ikura; 10 pieces of nigiri including grilled otoro over charcoal, uni nigiri, and peach shrimp (or kuruma ebi) nigiri; a soup; and dessert.
