The exquisite stock (broth) that forms the base of every dish is what truly brings this journey of thought to life.
Seafood is rubbed with powdered spices and fried to a fragrant finish, while chicken is rubbed with spices and yogurt and oven-roasted.
Each dish is slowly simmered with aromatic vegetables in Somei water (Nashiki Shrine), one of Kyoto's three most renowned springs, to extract a profound flavor that combines French and spice techniques.
