izon explores history and culture from around the world through the lens of spices, reconstructing them using the terroir of Kyoto. Based on French techniques and using the renowned water of Nashinoki Shrine for our fond (soup stock), we offer an intellectual dining experience.
Our cuisine is based on French techniques and a delicate "fond" (broth) drawn from the renowned water of Nashinoki Shrine. We highlight the natural flavors of seasonal ingredients and vegetables from Ohara.

【LUNCH】 The Deep Dive "Denmark, or Future Terroir"
A seasonal short course that selects one country and delves deep into its context. Starting in February, we focus on Denmark and the melting ice of Greenland, drawing a "constellation" on a single plate.

【DINNER】 Spice Anthology "The Full View of the World Map, Appearing in the Quiet Night"
Limited to 5 seats per day. A full 10-course meal unbound by specific countries, re-editing past travels and current explorations. Here, we present the continuation of the "unfinished map" drawn at lunch.
